Tips & Techniques:
Potato Cheese Soup

1. Peel about 8 large potatoes; cut into cubes. Cook in 2 cups of water until tender.
   
   
2. Saute 1 large onion in 2 tbsp. butter until tender. Stir in 1/4 cup flour and slowly add 1/4 cup milk until thickened. Add 1 tsp. salt and 1/2 tsp. pepper.
   
   
3. Slowly add to the potatoes and water. Add 2 1/2 cup milk.
   
   
4. Stir 1/4 cup flour into 2 cups of shredded cheddar. Mix into soup. Fry 1 pound of bacon, then crumble into large pieces and add to soup mixture.
   
   
5. Serve with a crusty bread!
