Tips & Techniques:
Balboni's Bolognese Sauce
Serves 12-15 hungry people
List of ingredients for (5 qts.):
- 12 oz. chopped onions
- 2 large carrots
- 3 large celery stalks
- 1.5 lbs. of 93% lean ground beef
- 5 cans of Contadina tomato sauce (15 oz. each)
- salt & pepper to taste
Now it's time to make it happen:
- Sauté onions until brown in two tablespoons of olive oil.
- Chop carrots and celery and add to sautéed onions.
- Add salt and pepper. Keep heat at maximum.
- When onions, carrots and celery are nice and brown, add ground beef. Don't leave big chunks of beef.
- Cook until beef is browned.
- Add more salt and pepper as needed.
- Add sauce (75 oz.) and stir slowly.
- Keep heat at maximum until sauce starts to boil.
- Drop heat from maximum down to 3 (or low).
- Cook sauce for approx. one hour.
- Stir approx. every15 minutes.
- Serve hot on any type of pasta.
- Optional: add a couple of fresh basil leaves while cooking.
PS: To preserve, freeze it. However, I strongly recommend eating it fresh.
